Rib Eye Specification

Cut from a 7 bone pistola - remove a 4 bone rib.
Taking a boneless forerib, remove the overlying CAP muscle
including the secondary CAP muscle.
The resulting flap of muscle is removed to ensure the remainder
is firmly attached to the main eye muscle.
Both ends must be square cut.
