Silverside Specification

Remove the heal (mouse) muscle and associated fat including
the lymph gland.
Remove the silver skin from the entire length of the silverside.
Remove all internal fat, connective tissue, sinew and undesirable
material, attention being required to the seam separating the
salmon and bed muscles.
Remove all remmants of the aitch bone.
Over the salmon muscle remove all loose membrane and
connective tissue down to tight muscle skin.
The distal end of the silverside is to be squared off.
