Rump Specification

Seperate the rump from the silverside to achieve a square cut
Fully remove the rump tail followimg the natural seam.
The fat seam containing the gland is completely removed.
Remove the diamond fat between the chain and cap muscle.
Remove the sacral gristle pad.
Trim external fat to a maximum thickness of 10mm.
Trim any loose meat to leave a "D" shape rump.
Square off the cut face trimming off any overhanging fat.
