Silverside Specification
| Remove the heal (mouse) muscle and associated fat including |
| the lymph gland. |
| Remove the silver skin from the entire length of the silverside. |
| Remove all internal fat, connective tissue, sinew and undesirable |
| material, attention being required to the seam separating the |
| salmon and bed muscles. |
| Remove all remmants of the aitch bone. |
| Over the salmon muscle remove all loose membrane and |
| connective tissue down to tight muscle skin. |
| The distal end of the silverside is to be squared off. |
| Use By: +35 days - Standard. |
| Packaging: Extra Matured Kingdom Box. |
