Rump Specification
| Seperate the rump from the silverside to achieve a square cut |
| Fully remove the rump tail followimg the natural seam. |
| The fat seam containing the gland is completely removed. |
| Remove the diamond fat between the chain and cap muscle. |
| Remove the sacral gristle pad. |
| Trim external fat to a maximum thickness of 10mm. |
| Trim any loose meat to leave a "D" shape rump. |
| Square off the cut face trimming off any overhanging fat. |
| Use By: +35 days - Standard. |
| Packaging: Extra Matured Kingdom Box. |
