Fillet Specification
| Fillet to be removed 48/72hrs post kill from hindquarter. |
| Remove the full chain and clean the fillet of all loose skin, fat, |
| glands and loose tissue. |
| On the underside the fat pocket must be removed between the |
| butt tip and barrel. |
| Clean the underside of loose fat. |
| Square off the tail of the fillet to achieve a 25mm minimum |
| diameter on the cut face. |
| Use By: +35 days - Standard. |
| Packaging: Extra Matured Coffin Box. |
| Four Pieces per box. |
